In 1997 the oil has got this recognition by the European Union and only those, who respect the production discipline and the special subsequent controls, can use this label. The only certified production areas are in the provinces of Brescia, Mantua, Verona and Trento.
The oil of Garda is known for its natural delicacy and elegance, the aroma is light and balanced, the scent reminds fresh grass and herbs, the aftertaste of almond makes it very special. The typical color varies from green to more or less intense yellow, the smell is light and fruity, the flavor is sweet and the maximum acidity must be 0.5%.
